Chokhatauri's botanical diversity is directly reflected in its honey varieties. The most delicate — linden (Tilia) honey — is pale and crystalline with subtle vanilla notes. Linden trees grow in every Gurian village, and peak linden blossom occurs in June.
Forest honey is altogether different — dark, strong, with resinous notes. This honey carries the richest antioxidant content and is considered medicinally valuable in local folk medicine.
Meadow/alpine honey, coming from the Bakhmaro environs, has the most polyfloral composition. This honey contains the nectar of thousands of flowers and reflects the richness of Bakhmaro's alpine meadows.
